Yummy Fluffy Pancakes!!!!!!!!! seriously

I have been in search of a good homemade pancake recipe for sometime now and to my great delight finally found one on my favorite recipe site.... allrecipes.com. After making it a few times I realized it doesn't call for any oil, what a plus!!!! Ok so I lied I just read the recipe and it calls for butter but I never have added this and they still turn out great!!!!!!!!!! (the flax seed would help with this and can be a substitute for oil in recipes so perhaps that's why it is not missed)

INGREDIENTS
3/4 cup milk
2 tablespoons white vinegar
1 cup all-purpose flour
2 tablespoons white sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
I sprinkle in some milled flax seed and wheat germ (approx 3-5TBS each)
1 egg
2 tablespoons butter, melted (I've never added this)
cooking spray

DIRECTIONS
Combine milk with vinegar in a medium bowl and set aside for 5 minutes to "sour". (I know this sounds seriously weird but it's like makeshift buttermilk, if you ever have a recipe that calls for buttermilk and you dont' have any you can do this and substitute it for buttermilk)
Combine flour, sugar, baking powder, baking soda, and salt in a large mixing bowl. Whisk egg and butter into "soured" milk. Pour the flour mixture into the wet ingredients and whisk until lumps are gone. (Don't over mix)(This batter is really thick!!!! but that's what helps make is so fluffy)
Heat a large skillet over medium heat, and coat with cooking spray. Pour 1/4 cupfuls of batter onto the skillet, and cook until bubbles appear on the surface. Flip with a spatula, and cook until browned on the other side.

Our favorite ways to serve these has been...
1. With cream cheese, sliced strawberries and warm syrup YUM (these strawberries were from our garden, super YUM)
2. chocolate chip pancakes with peanut butter spread on top and drizzled with warm syrup (drop the chocolate chips in after pouring the pancake batter on the skillet to ensure proper chip distribution) SERIOUSLY THE BEST!!!!!!

The Fruits of Our Labor

Summer 2009

First there was broccoli and blueberries.....







Then came everything else; tomatoes, cucumbers, squash, onions, peppers, strawberries, cantelope, watermelon, corn, snap peas, carrots, beans, eggplant and a plethora of herbs.... YUMMM!!!! (our lettuce and cabbage didn't turn out, not YUMMM)

And lets not forget the beautiful flowers too...



Our very first attempt at growing a garden I would say was a surprising success... especially considering that I was not born with a green tumb, despite my mothers talent with things that grow. Although, I must admit much of the sucess of our garden was due to Justin's diligent and consistent efforts. My focus was more on the front flower garden... which was a complete experiment, I just dug around and planted a bunch of seeds. Flowers grew up in many unexpected ways. We learned alot and throughly enjoyed it, can't wait til next season!!!!!

A Saturday with the Moores

Crazy about her baby.... which irronically Brayden got trick or treating when we lived in Charleston... wierd huh?

Keep ur eyes peeled for all our spooky decor.... we r really getting into Halloween this year, espeically since we are having a Halloween boo-thday party for Bub... I can't believe he's gonna be 4 has it really been that long.... well I am old now so I guess it's possible...

Happy mommy cook'n in the kitchen... we had the most wonderful dinner; roast veggies (some from our garden), garlic herb pork tenderloin and brown rice. Yummmm so good!!!!

Brayden actually got to stay up a bit later and decorate scary spooky Halloween cookies with mom and dad... pics will follow... it was actually quite hilarious how crazy Bub went with the frosting and decorating.... tasty treats and tons of fun was had by all!!!!! Lovin Halloween this year!!!!
